We peel, dice, and soak the potatoes overnight in the refrigerator to release as much starch as possible (no gummy mashed potatoes here!) and then rinse them thoroughly the following day. Once cooked until tender, we add our no-so-secret ingredient- browned butter. Browning butter allows the milk solids in the butter to toast until they take on almost a nutty flavor, mixed with potatoes, it is a true match made in heaven! We also add cream, kosher salt, and fresh cracked black pepper then whip until completely smooth.
